White Chicken Chili with Cream Cheese

Ingredients
  

Protein
  • 2 cups cooked shredded chicken breast
  • 2 cans (15 oz each) white beans, drained and rinsed
  • 1 can (4 oz) diced green chilies
Vegetables
  • 1 medium onion, diced
  • 3 cloves garlic, minced
Broth & Spices
  • 4 cups low-sodium chicken broth
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
Dairy
  • 1 package (8 oz) cream cheese, softened
  • 1 tablespoon olive oil

Method
 

  1. Heat olive oil in a large pot over medium heat. Add diced onion and cook for 3-4 minutes until softened.
  2. Add minced garlic and cook for 1 minute until fragrant.
  3. Stir in shredded chicken, white beans, green chilies, cumin, oregano, chili powder, salt, and black pepper. Pour in chicken broth and simmer for 20-25 minutes.
  4. Add cream cheese and stir until melted and creamy. Cook for 5 more minutes.
  5. Serve hot, garnished as desired.

Notes

For extra flavor, garnish with fresh cilantro or shredded cheese.
