Ingredients
  

Broth
  • 3 cups chicken broth
  • 2 cups bone broth
Lemon Zest and Juice
  • Zest of 1 lemon lemon zest
  • Juice of 2 lemons lemon juice
Bay Leaves and Seasonings
  • 2 bay leaves bay leaves
  • 1/2 tsp each tsp salt
  • 1/2 tsp each tsp black pepper
Eggs
  • 2-3 large eggs eggs
Main Proteins and Carbohydrates
  • 2 cups shredded rotisserie chicken
  • 2 cups cooked basmati rice
Fresh Herbs and Extras
  • 2 tbsp tbsp fresh dill

Method
 

  1. Combine broth, lemon zest, juice, bay leaves, salt, and pepper in a pot; simmer for 10-15 minutes.
  2. Whisk eggs and lemon juice in a bowl. Temper eggs with hot broth, then slowly add back to the pot, stirring gently.
  3. Remove from heat; stir in shredded chicken, rice, and dill. Serve warm.

Use fresh lemon for the best flavor and adjust seasoning to taste.
