Ingredients
  

dry ingredients
  • 1 cup almond flour
  • 1/4 cup coconut flour
  • 1/2 cup erythritol or preferred sugar substitute
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
wet ingredients
  • 1/2 cup unsalted butter, softened
  • 1 large egg
  • 1 teaspoon vanilla extract
optional mix-ins
  • 1/2 cup sugar-free chocolate chips
  • 1/4 cup chopped nuts

Method
 

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Mix dry ingredients in a bowl; cream butter and erythritol in another.
  3. Add egg and vanilla to wet mixture, then combine with dry ingredients to form dough.
  4. Fold in chocolate chips and nuts if using, then scoop onto baking sheet and flatten.
  5. Bake for 10-12 minutes until edges are golden; cool before serving.
