Method
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Mix dry ingredients in a bowl; cream butter and erythritol in another.
- Add egg and vanilla to wet mixture, then combine with dry ingredients to form dough.
- Fold in chocolate chips and nuts if using, then scoop onto baking sheet and flatten.
- Bake for 10-12 minutes until edges are golden; cool before serving.
