Dressing

  • 2 tablespoons red grape juice vinegar
  • 2 tablespoons tahini or mayo Choose one
  • 1 tablespoon Dijon mustard
  • 1 tablespoon honey

  • to taste black pepper
Salad
  • 1 shallot sliced
  • 1/2 cup mixed fresh herbs (basil, oregano, dill)
  • 1/4 cup pine nuts toasted
  • 1/2 teaspoon chili flakes Optional for heat
  • 8 ounces short cut pasta
  • 1 cup mixed Greek olives pitted
  • 1 cup bell peppers chopped
  • 1 cup chopped cucumber
  • 1 cup cherry tomatoes halved
  • 1 can canned chickpeas drained
  • 1/4 cup sliced pepperoncini
  • 1 cup feta cheese crumbled (To top before serving)

Method
 

  1. Cook pasta according to package directions.
  2. Whisk together dressing ingredients.
  3. Combine cooked pasta with remaining salad ingredients.
  4. Pour dressing over salad and toss to combine.
  5. Top with feta cheese before serving.
