Ingredients
  

Dough
  • 1 cup unsalted butter, softened
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp ground cinnamon
  • 1/2 tsp salt
  • 3 cups rolled oats
  • 1 cup dried cranberries
  • 1 cup white chocolate chips

Method
 

  1. Preheat oven to 350°F (175°C) and line baking sheets.
  2. Cream butter, sugars, then add eggs and vanilla.
  3. Mix in flour, baking soda, cinnamon, and salt.
  4. Stir in oats, cranberries, and white chocolate chips.
  5. Drop dough onto sheets and bake 10-12 minutes.

Notes

For softer cookies, slightly underbake and cool on racks.
