  • 1 pound elbow macaroni
  • 1/2 cup butter
  • 1/4 cup all-purpose flour
  • 3 cups milk
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 pound Velveeta cheese, cubed

Method
 

  1. Cook macaroni according to package directions. Drain.
  2. Melt butter in a large saucepan over medium heat.
  3. Whisk in flour until smooth.
  4. Gradually whisk in milk until smooth.
  5. Bring to a simmer, stirring constantly.
  6. Reduce heat and simmer for 5 minutes, stirring occasionally.
  7. Stir in salt and pepper.
  8. Add Velveeta cheese and stir until melted and smooth.
  9. Add cooked macaroni to the cheese sauce and stir to coat.
  10. Serve immediately.

Notes

For a richer flavor, use whole milk or add a pinch of nutmeg to the cheese sauce.
