Ingredients
  

Dry ingredients
  • 1 cup rolled oats
  • 1 cup flour (whole wheat or all-purpose)
  • 1/2 cup maple syrup or agave nectar
  • 1/2 cup coconut oil, melted
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/2 cup raisins or chocolate chips (optional)

Method
 

  1. Preheat oven to 350°F (175°C). Mix dry ingredients in a bowl.
  2. Combine wet ingredients in another bowl.
  3. Mix wet into dry until just combined. Fold in raisins or chocolate chips if using.
  4. Scoop dough onto a lined baking sheet and flatten slightly.
  5. Bake for 10-12 minutes until edges are golden. Cool before serving.

Notes

For a chewier texture, refrigerate the dough before baking.
