Ingredients
  

Dry ingredients
  • 1 cup all-purpose flour
  • 1/2 cup almond flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
Wet ingredients
  • 1/2 cup coconut sugar
  • 1/4 cup maple syrup
  • 1/4 cup coconut oil, melted
  • 1 teaspoon vanilla extract
Spices and optional add-ins
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/2 cup vegan chocolate chips or dried fruit (optional)

Method
 

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Mix dry ingredients in a large bowl; combine wet ingredients separately.
  3. Combine wet and dry mixtures; fold in chocolate chips or dried fruit if using.
  4. Scoop dough onto baking sheet, flatten slightly, and bake for 10-12 minutes.
  5. Cool cookies on a wire rack before serving.

Notes

For best results, use high-quality vegan chocolate chips or dried fruit.
