Ingredients
  

Pasta Salad
  • 1 pound pasta such as rotini, shells, or elbow macaroni
  • 4 ears corn grilled or roasted
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream or Greek yogurt
  • 1/4 cup cotija cheese crumbled, plus more for garnish
  • 1/4 cup cilantro chopped
  • 2 tablespoons lime juice
  • 1 jalapeño seeded and minced (optional)
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • to taste Salt and pepper

Method
 

  1. Cook pasta, drain, and rinse.
  2. Grill or roast corn, then cut kernels off the cob.
  3. Whisk together mayonnaise, sour cream, cotija, cilantro, lime juice, jalapeño (if using), chili powder, and cumin.
  4. Add pasta and corn to the dressing; toss to coat.
  5. Season with salt and pepper.
  6. Chill for at least 30 minutes.
  7. Garnish with cotija cheese and cilantro before serving.

Notes

Adjust the amount of jalapeño to control the spice level.
