  • 1 pound elbow macaroni
  • 1/2 cup butter
  • 1/2 cup all-purpose flour
  • 3 cups milk
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon ground nutmeg
  • 4 cups shredded cheddar cheese
  • 1 cup shredded Gruyere cheese
  • 1/2 cup panko bread crumbs
  • 1/4 cup melted butter (for topping)

Method
 

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Cook macaroni according to package directions. Drain and set aside.
  3. Melt 1/2 cup butter over medium heat. Stir in flour until smooth.
  4. Gradually whisk in milk until smooth. Bring to a simmer, stirring constantly.
  5. Reduce heat and simmer for 5 minutes, stirring occasionally.
  6. Stir in salt, pepper, and nutmeg.
  7. Remove from heat and stir in cheddar and Gruyere cheese until melted and smooth.
  8. Add cooked macaroni to the cheese sauce and stir to combine.
  9. Pour macaroni and cheese into a greased 9x13 inch baking dish.
  10. Combine panko bread crumbs and melted butter. Sprinkle over the macaroni and cheese.
  11. Bake for 20-25 minutes, or until golden brown and bubbly.

Notes

For an extra crispy topping, broil for the last 1-2 minutes, watching carefully to prevent burning.
