Ingredients
  

Vegetables
  • 2 medium sweet potatoes washed, peeled, and cubed
  • 1 can (15 oz) butter beans drained and rinsed
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • to taste salt and pepper
  • for garnish fresh parsley chopped

Method
 

  1. Preheat oven to 400°F (200°C).
  2. Cube sweet potatoes and toss with olive oil, paprika, garlic powder, salt, and pepper.
  3. Roast on a baking sheet for 25-30 minutes until tender and crispy.
  4. Sauté butter beans in a skillet for 5-7 minutes until warmed and slightly crispy.
  5. Combine roasted sweet potatoes with butter beans, garnish with parsley, and serve.

Notes

For extra flavor, add a squeeze of lemon before serving.
