Ingredients
  

Vegetables
  • 2 medium sweet potatoes, peeled and diced
  • 1 pound breakfast beef sausage (beef or turkey)
  • 6 large eggs
  • 1 cup milk
  • 1 cup shredded cheese (cheddar or your choice)
  • 1/2 cup diced onion
  • 1/2 teaspoon garlic powder
  • to taste Salt and pepper
  • 1 teaspoon olive oil
  • optional Fresh herbs for garnish

Method
 

  1. Preheat oven to 350°F (175°C).
  2. Sauté diced onion in olive oil until translucent, then cook sausage until browned.
  3. Whisk eggs, milk, garlic powder, salt, and pepper in a bowl.
  4. Layer sweet potatoes, sausage mixture, and cheese in a greased 9x13 inch dish, then pour egg mixture over.
  5. Bake for 35-40 minutes until set and golden. Cool slightly, garnish with herbs, and serve.

Notes

For extra flavor, add fresh herbs on top before serving.
