Method
- Preheat oven to 350°F (175°C) and line a muffin tin.
- Mix mashed sweet potatoes, Greek yogurt, honey, eggs, and vanilla until smooth.
- Combine dry ingredients in a bowl.
- Gradually add dry to wet, fold in nuts if desired.
- Fill muffin cups 3/4 full and bake 18-20 minutes.
- Cool muffins before serving.
Notes
For extra flavor, add a pinch of ginger or cloves.
