Ingredients
  

Wet Ingredients
  • 1 cup mashed sweet potatoes
  • 1/2 cup Greek yogurt
  • 1/4 cup honey or maple syrup
  • 2 large eggs
  • 1 teaspoon vanilla extract
Dry Ingredients
  • 1 cup whole wheat flour
  • 1/2 cup rolled oats
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1/2 cup chopped nuts or seeds (optional)

Method
 

  1. Preheat oven to 350°F (175°C) and line a muffin tin.
  2. Mix mashed sweet potatoes, Greek yogurt, honey, eggs, and vanilla until smooth.
  3. Combine dry ingredients in a bowl.
  4. Gradually add dry to wet, fold in nuts if desired.
  5. Fill muffin cups 3/4 full and bake 18-20 minutes.
  6. Cool muffins before serving.

Notes

For extra flavor, add a pinch of ginger or cloves.
