Ingredients
  

Pasta Salad
  • 1 lb rotini pasta cooked according to package instructions
  • 2 cups corn kernels fresh or frozen
  • 1 pint cherry tomatoes halved
  • 1/2 red onion finely chopped
  • 4 oz crumbled feta cheese
  • 1/4 cup fresh cilantro chopped
Dressing
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 2 tablespoons lime juice freshly squeezed
  • 1 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • to taste Salt and pepper

Method
 

  1. Cook pasta, drain, and rinse with cold water.
  2. Combine pasta, corn, tomatoes, onion, feta, and cilantro in a bowl.
  3. Whisk together mayonnaise, sour cream, lime juice, chili powder, garlic powder, salt, and pepper.
  4. Pour dressing over pasta mixture and toss.
  5. Refrigerate for at least 30 minutes.
  6. Stir and adjust seasoning before serving.

Notes

Add a pinch of cayenne pepper for extra heat.
