Ingredients
  

Salad
  • 1 can black beans rinsed and drained
  • 1 cup cooked pasta rotini, penne, or your favorite
  • 0.5 cup corn kernels fresh, frozen, or canned
  • 0.5 cup diced red bell pepper
  • 0.25 cup diced red onion
  • 0.25 cup chopped cilantro
Dressing
  • 2 tablespoons lime juice
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 0.5 teaspoon cumin
  • to taste Salt and pepper
Optional Toppings
  • avocado
  • shredded cheese
  • sour cream
  • salsa

Method
 

  1. Combine black beans, pasta, corn, bell pepper, onion, and cilantro in a bowl.
  2. Whisk lime juice, olive oil, chili powder, cumin, salt, and pepper in a small bowl.
  3. Pour dressing over pasta mixture and toss.
  4. Adjust seasonings to taste.
  5. Serve or chill. Top with optional toppings.

Notes

For a spicier kick, add a pinch of cayenne pepper to the dressing.
