Southern Sweet Potato Casserole

Ingredients
  

Sweet Potatoes
  • 5 pounds sweet potatoes
  • 4 tablespoons butter
  • 2 eggs eggs slightly beaten
  • 1 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon ground nutmeg
  • 1/2 cup dark brown sugar
  • 1/4 cup heavy cream
Butter for greasing baking dish
  • 1/2 cup all-purpose flour
  • 1 cup dark brown sugar
  • 1/4 teaspoon salt
  • 1 cup quick-cooking oats
  • 1/2 teaspoon ground cinnamon
  • 1 stick butter cut into chunks
  • 2 cups miniature marshmallows

Method
 

  1. Preheat oven to 350°F (175°C). Wrap sweet potatoes in foil and bake for 1 hour until fork-tender.
  2. Cool, peel, and mash sweet potatoes with butter. Mix in eggs, salt, cinnamon, vanilla, and nutmeg.
  3. Add brown sugar and cream; mix well. Prepare streusel topping by combining flour, sugar, salt, oats, cinnamon, and butter until crumbly.
  4. Grease a 9x13-inch pan, spread sweet potato mixture, top with marshmallows, then crumble streusel over marshmallows.
  5. Bake for 30-40 minutes at 350°F until bubbly and golden.

Notes

For a richer flavor, toast the oats before adding to the streusel.
