- Preheat oven to 350°F (175°C). Wrap sweet potatoes in foil and bake for 1 hour until fork-tender.
- Cool, peel, and mash sweet potatoes with butter. Mix in eggs, salt, cinnamon, vanilla, and nutmeg.
- Add brown sugar and cream; mix well. Prepare streusel topping by combining flour, sugar, salt, oats, cinnamon, and butter until crumbly.
- Grease a 9x13-inch pan, spread sweet potato mixture, top with marshmallows, then crumble streusel over marshmallows.
- Bake for 30-40 minutes at 350°F until bubbly and golden.
Notes
For a richer flavor, toast the oats before adding to the streusel.
