Ingredients
  

Sweet Potatoes
  • 5 pounds sweet potatoes
  • 4 tablespoons butter
  • 2 eggs eggs slightly beaten
  • 1 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon ground nutmeg
  • 1/2 cup dark brown sugar
  • 1/4 cup heavy cream
Butter for greasing baking dish
  • 1/2 cup all-purpose flour
  • 1 cup dark brown sugar
  • 1/4 teaspoon salt
  • 1 cup quick-cooking oats
  • 1/2 teaspoon ground cinnamon
  • 1 stick butter cut into chunks
  • 2 cups miniature marshmallows

Method
 

  1. Preheat oven to 350°F (175°C).
  2. Bake sweet potatoes wrapped in foil for 1 hour, then cool and peel.
  3. Mash potatoes with butter, then mix in eggs, salt, cinnamon, vanilla, and nutmeg.
  4. Add brown sugar and cream, then prepare streusel topping with flour, sugar, oats, cinnamon, and butter.
  5. Spread sweet potato mixture in a greased 9x13-inch pan, top with marshmallows and streusel, then bake for 30-40 minutes.

Notes

For best results, use fresh sweet potatoes and ensure marshmallows are evenly distributed on top before baking.
