Ingredients
  

Protein
  • 2 pounds boneless, skinless chicken thighs or breasts
  • 3 pieces carrots diced
  • 3 stalks celery diced
  • 1 piece onion diced
Vegetables
  • 4 medium potatoes peeled and cubed
  • 4 cloves garlic minced
Broth
  • 4 cups low-sodium chicken broth
Herbs & Spices
  • 1 teaspoon dried thyme
  • 2 bay leaves bay leaves
  • To taste salt and pepper
  • 1/4 cup flour optional for thickening
Garnish
  • Chopped parsley for garnish

Method
 

  1. Sear chicken in a skillet until golden brown.
  2. Place chicken, vegetables, potatoes, garlic, and bay leaves into slow cooker.
  3. Sprinkle thyme, salt, and pepper; pour broth. Add flour if thickening.
  4. Cook on low for 6-8 hours or high for 3-4 hours.
  5. Ladle into bowls and garnish with parsley.

Notes

For a thicker stew, add more flour or cook uncovered for a bit longer.
