Ingredients
  

Meat
  • 1 pound breakfast beef sausage
Vegetables
  • 2 medium sweet potatoes, peeled and diced
  • 1 diced bell pepper
  • 1 small onion, diced
Other
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • to taste Salt and pepper Salt and pepper
  • optional for garnish Fresh parsley for garnish

Method
 

  1. Cook sausage in a skillet until browned, then remove and set aside.
  2. Add sweet potatoes to the skillet and cook for 10 minutes until soft.
  3. Add bell pepper and onion, season with garlic powder, paprika, salt, and pepper, and cook for another 10-15 minutes.
  4. Return sausage to the skillet, stir to combine, and cook for 2-3 minutes.
  5. Serve hot, garnished with parsley if desired.
