Ingredients
  

Pasta Salad
  • 1 pound pasta rotini, penne, or your favorite
  • 2 cups cooked rotisserie chicken shredded or cubed
  • 1 cup mayonnaise
  • 1/2 cup sour cream
  • 1/4 cup chopped celery
  • 1/4 cup chopped red onion
  • 1/4 cup chopped fresh parsley
  • 2 tablespoons Dijon mustard
  • 1 tablespoon lemon juice
  • 1 teaspoon garlic powder
  • to taste Salt and pepper
  • 1/2 cup chopped bell pepper any color (optional)
  • 1/2 cup shredded carrots (optional)
  • 1/4 cup chopped olives (optional)

Method
 

  1. Cook pasta, drain, rinse with cold water, and cool.
  2. Combine mayonnaise, sour cream, celery, red onion, parsley, Dijon mustard, lemon juice, garlic powder, salt, and pepper. Mix well.
  3. Add pasta, chicken, and optional ingredients to the dressing. Toss gently.
  4. Taste and adjust seasonings.
  5. Refrigerate for at least 30 minutes.
  6. Serve chilled.

Notes

For a lighter version, use Greek yogurt instead of sour cream.
