Ingredients
  

Pumpkin Batter
  • 1 cup canned pumpkin puree
  • 1/2 cup vegetable oil
  • 1 cup sugar
  • 1/2 cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground ginger
  • 1/2 cup chopped walnuts or pecans (optional)
Streusel Topping
  • 1/2 cup old-fashioned oats
  • 1/3 cup brown sugar
  • 1/4 cup all-purpose flour
  • 1 teaspoon ground cinnamon
  • 2 tablespoons unsalted butter, melted

Method
 

  1. Preheat oven to 350°F (175°C) and grease a 9x5 inch loaf pan.
  2. Mix pumpkin, oil, sugars, eggs, and vanilla until combined. Whisk dry ingredients separately, then combine with wet. Add nuts if desired.
  3. Pour batter into prepared pan. Prepare streusel by mixing oats, sugars, flour, cinnamon, and melted butter; sprinkle over batter.
  4. Bake for 60-65 minutes until a toothpick comes out clean. Cool in pan for 10 minutes, then transfer to wire rack.

Store in an airtight container for up to 3 days or freeze for longer storage.
