Method
- Preheat oven to 350°F (175°C) and grease a 9x5 inch loaf pan.
- Mix pumpkin, oil, sugars, eggs, and vanilla until combined. Whisk dry ingredients separately, then combine with wet. Add nuts if desired.
- Pour batter into prepared pan. Prepare streusel by mixing oats, sugars, flour, cinnamon, and melted butter; sprinkle over batter.
- Bake for 60-65 minutes until a toothpick comes out clean. Cool in pan for 10 minutes, then transfer to wire rack.
