Method
- Preheat oven to 350°F (175°C) and grease a loaf pan.
- Mix pumpkin, sugar, and oil. Add eggs one at a time.
- Combine dry ingredients and add to wet mixture. Stir in vanilla.
- Pour batter into pan and bake for 60-70 minutes.
- Cool in pan 10 minutes, then transfer to wire rack.
