Ingredients
  

Pasta Salad
  • 8 oz chickpea pasta penne or rotini works best
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • 1/3 cup red onion thinly sliced
  • 1/2 cup crumbled feta cheese or tofu
  • 1/4 cup Kalamata olives sliced
  • 2 tbsp chopped fresh parsley
  • 1 tbsp chopped fresh basil optional
Dressing
  • 3 tbsp extra virgin olive oil
  • 1 lemon Juice of 1 lemon (about 2 tbsp)
  • 1 clove garlic finely minced
  • 1 tsp Dijon mustard
  • 1/2 tsp dried oregano
  • to taste Salt and pepper

Method
 

  1. Cook the Pasta
  2. Prep the Vegetables
  3. Make the Dressing
  4. Assemble the Salad
  5. Chill & Serve

Notes

For a milder onion flavor, soak the red onion slices in cold water for 5–10 minutes before adding to the salad.
