  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 1/2 teaspoons ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon ground ginger
Wet Ingredients
  • 2 large eggs
  • 1 1/4 cups granulated sugar
  • 1/2 cup vegetable oil (or neutral oil)
  • 1/3 cup maple syrup
  • 1 cup canned pumpkin puree not pumpkin pie filling
  • 1 teaspoon vanilla extract
Streusel Topping
  • 1/2 cup granulated sugar
  • 1/3 cup all-purpose flour
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/4 cup unsalted butter cold, cubed
Maple Glaze
  • 2-3 tablespoons maple syrup
  • 1 tablespoon milk or cream

Method
 

  1. Preheat oven to 350°F (175°C). Grease and flour a loaf pan or line with parchment.
  2. Mix dry ingredients: whisk flour, baking soda, baking powder, salt, cinnamon, nutmeg, cloves, and ginger.
  3. Combine wet ingredients: whisk eggs and sugar, then add oil, maple syrup, pumpkin, and vanilla until smooth.
  4. Fold dry ingredients into wet until just combined. Prepare streusel topping with sugar, flour, cinnamon, salt, and butter.
  5. Pour batter into pan, sprinkle streusel on top, and bake for 55-65 minutes. Cool before glazing.

Notes

Ensure not to overmix the batter to keep the bread tender.
