  • 1 tablespoon olive oil
  • 1 pound chicken breast, cooked and shredded
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 cups chicken broth
  • 1 can (4 oz) diced green chilies
  • 1 can (15 oz) white beans, drained and rinsed
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon oregano
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon cayenne pepper
  • 1 cup heavy cream
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup chopped cilantro
  • to taste NA Salt
  • to taste NA Black pepper

Method
 

  1. Heat olive oil and cook diced onion until translucent, about 5 minutes.
  2. Add garlic and cook for 1 minute, then pour in chicken broth and bring to simmer.
  3. Stir in green chilies, white beans, and spices; simmer for 10-15 minutes.
  4. Add shredded chicken, heavy cream, and cook for 5 minutes. Season with salt and pepper.
  5. Remove from heat, stir in cheddar cheese, and garnish with cilantro before serving.
