  • 1 pound pasta (rotini, penne, or farfalle)
  • 1/2 cup Italian dressing
  • 1/4 cup red grape juice vinegar
  • 1/2 cup cherry tomatoes, halved
  • 1/2 cup black olives, sliced
  • 1/2 cup mozzarella cheese, cubed
  • 1/4 cup beef pepperoni, sliced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh parsley, chopped

Method
 

  1. Cook pasta according to package directions. Drain and rinse with cold water.
  2. In a large bowl, whisk together Italian dressing and red grape juice vinegar.
  3. Add the cooked pasta, cherry tomatoes, black olives, mozzarella cheese, beef pepperoni, and red onion to the bowl.
  4. Toss to combine.
  5. Stir in fresh parsley.
  6. Season with salt and pepper to taste.
  7. Refrigerate for at least 30 minutes before serving to allow flavors to meld.

Notes

For a vegetarian option, omit the pepperoni and add more vegetables like bell peppers or cucumbers.
