Ingredients
  

Vegetables
  • 1/2 tablespoon olive oil
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
Chicken and Canned Goods
  • 2 large boneless, skinless chicken breasts
  • 2 14 oz cans white beans, drained
  • 2 4 oz cans mild green chilies
Liquids and Spices
  • 2 cups chicken broth
  • 2 teaspoons chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon dried oregano
  • 4 oz cream cheese (1/2 block), softened
Salt and Pepper

Method
 

  1. Sauté the onion and garlic in olive oil until translucent, about 4-5 minutes.
  2. Add chicken, beans, chilies, broth, and spices. Stir to combine.
  3. Seal the lid and cook on high pressure for 8 minutes, then quick release.
  4. Remove chicken, shred with forks, and stir back into the chili. Add cream cheese and stir until melted.

Notes

For extra flavor, top with fresh cilantro and a squeeze of lime before serving.
