Ingredients
  

Dry ingredients
  • 1.5 cups all-purpose flour
  • 1 teaspoon baking soda
  • 0.5 teaspoon baking powder
  • 0.5 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon ground nutmeg
  • 0.5 teaspoon ground ginger
Wet ingredients
  • 1 cup granulated sugar
  • 0.5 cup brown sugar
  • 1 cup canned pumpkin puree
  • 0.5 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
Optional nuts
  • 0.5 cup chopped walnuts or pecans optional

Method
 

  1. Preheat oven to 350°F (175°C) and grease a 9x5 inch loaf pan.
  2. Mix dry ingredients in a bowl.
  3. Combine wet ingredients in a large bowl.
  4. Gradually add dry to wet, mix until just combined, then fold in nuts if using.
  5. Pour batter into pan, bake 60-70 minutes, cool before serving.

Notes

For extra moisture, add a splash of milk before baking.
