Ingredients

  • 1 whole whole chicken, preferably organic 4-5 lbs
  • 1 pound carrots, cut in half
  • 0.25 piece celery bunch remove lower 1/4 for soup
  • 2 yellow onion yellow onion, quartered
  • 1 head garlic, halved
  • 0.25 small head small head of cabbage, halved
  • 2 bay leaves bay leaves
  • 10-15 whole black peppercorns black peppercorns
  • 1 tbsp. sweet Hungarian paprika
  • 1 tbsp. salt
  • 1 bunch fresh parsley
  • water to cover water to cover chicken
  • Cooked noodles to taste cooked noodles (pastina or any pasta) for serving

Method
 

  1. Rinse the chicken, place in a pot with vegetables, herbs, and water. Bring to a boil, then simmer for 1.5-2 hours until tender.
  2. Remove chicken, shred the meat, and strain the broth through a sieve. Sauté vegetables and garlic to extract flavor, then add shredded chicken back into the broth.
  3. Slice carrots and add to the broth. Adjust seasoning as needed. Serve hot over noodles, garnished with parsley.
