Method
- Rinse the chicken, place in a pot with vegetables, herbs, and water. Bring to a boil, then simmer for 1.5-2 hours until tender.
- Remove chicken, shred the meat, and strain the broth through a sieve. Sauté vegetables and garlic to extract flavor, then add shredded chicken back into the broth.
- Slice carrots and add to the broth. Adjust seasoning as needed. Serve hot over noodles, garnished with parsley.
