Ingredients
  

Sweet Potatoes
  • 2 medium sweet potatoes, grated
Onion
  • 1 small small onion, finely chopped
Olive Oil
  • 2 tablespoons olive oil
Salt
  • to taste salt
Pepper
  • to taste pepper
Paprika
  • 1/2 teaspoon teaspoon paprika (optional)
Fresh Parsley
  • for garnish fresh parsley (optional)

Method
 

  1. Peel and grate the sweet potatoes, then wring out excess moisture.
  2. Heat olive oil in a skillet over medium heat.
  3. Sauté onion until translucent, then add grated sweet potatoes and season with salt, pepper, and paprika.
  4. Cook without stirring for 5-7 minutes until golden, then flip and cook other side for 5-7 minutes until crispy.
  5. Garnish with parsley if desired and serve warm.

Notes

Wring out moisture thoroughly for crispier hash browns.
