- Peel and grate the sweet potatoes, then wring out excess moisture.
- Heat olive oil in a skillet over medium heat.
- Sauté onion until translucent, then add grated sweet potatoes and season with salt, pepper, and paprika.
- Cook without stirring for 5-7 minutes until golden, then flip and cook other side for 5-7 minutes until crispy.
- Garnish with parsley if desired and serve warm.
Notes
Wring out moisture thoroughly for crispier hash browns.
