Salad Ingredients
  • 2 cups whole wheat pasta
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • 1/2 cup bell pepper diced
  • 1/4 cup red onion finely chopped
  • 1/4 cup olives sliced
  • 1/4 cup feta cheese crumbled
Dressing
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon dried oregano
  • to taste Salt and pepper

Method
 

  1. Cook pasta per package instructions.
  2. Drain and rinse with cold water.
  3. Combine pasta, tomatoes, cucumber, bell pepper, red onion, olives, and feta.
  4. Whisk olive oil, balsamic vinegar, oregano, salt, and pepper.
  5. Pour dressing over salad and toss.
  6. Chill for 30 minutes before serving.

Notes

Add grilled chicken or chickpeas for extra protein.
