  • 1 cup pumpkin puree
  • 1/2 cup honey or maple syrup
  • 1/4 cup coconut oil or unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
Dry Ingredients
  • 1.5 cups whole wheat flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1/2 teaspoon salt
  • 1/2 cup chopped walnuts or pecans (optional)

Method
 

  1. Preheat oven to 350°F (175°C) and grease a loaf pan.
  2. Mix pumpkin, honey, melted butter, eggs, and vanilla until smooth.
  3. Whisk dry ingredients together in a separate bowl.
  4. Combine wet and dry mixtures; fold in nuts if using.
  5. Pour batter into pan; bake 50-60 minutes until a toothpick comes out clean.
  6. Cool 10 minutes, then transfer to wire rack. Slice and serve.
