  • 3 ripe bananas mashed
  • 1/4 cup unsweetened applesauce
  • 1/4 cup honey or maple syrup
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups whole wheat flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup chopped walnuts or pecans optional

Method
 

  1. Preheat oven to 350°F (175°C). Grease a loaf pan.
  2. Mash bananas, add applesauce, honey/maple syrup, egg, and vanilla. Mix well.
  3. Whisk together flour, baking soda, and salt in a separate bowl.
  4. Gradually add dry ingredients to wet, mixing until just combined. Do not overmix.
  5. Fold in the chopped nuts (if using).
  6. Pour batter into the prepared loaf pan.
  7. Bake for 50-60 minutes, or until a toothpick comes out clean.
  8. Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

For extra flavor, add a sprinkle of cinnamon or nutmeg to the batter.
