  • 2 medium sweet potatoes peeled and diced
  • 1 cup diced turkey ham
  • 1 small onion diced
  • 1 bell pepper bell pepper diced
  • 2 tablespoons olive oil
  • 4 large eggs
  • to taste Salt and pepper
  • Chopped fresh parsley for garnish (optional) parsley optional garnish

Method
 

  1. Cook sweet potatoes in a skillet with olive oil for 10-15 minutes until soft.
  2. Add onion and bell pepper; cook until translucent, about 5-7 minutes.
  3. Stir in turkey ham and cook for 5 minutes.
  4. Make four wells, crack eggs into each, cover, and cook until eggs are done, about 5-7 minutes.
  5. Season with salt and pepper, garnish with parsley if desired, and serve.
