Ingredients
  

Salad
  • 8 ounces bowtie pasta
  • 1.5 cups grape tomatoes sliced in half
  • 1 seedless cucumber sliced into half-circles or quarters
  • 1 bell pepper diced
  • 0.5 small red onion diced
  • 0.5 cup Kalamata olives drained
  • 0.66 cup feta cheese crumbed or cubed
  • 0.25 cup chopped fresh parsley
Dressing
  • 0.5 cup olive oil
  • 0.25 cup water
  • 3 tablespoons red grape juice vinegar
  • 2 tablespoons lemon juice
  • 2 tablespoons honey
  • 1 teaspoon dijon mustard
  • 2 cloves garlic minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried dill
  • 1 teaspoon dried mint
  • 0.5 teaspoon fine sea salt
  • 0.25 teaspoon freshly ground black pepper

Method
 

  1. Cook pasta al dente, drain and rinse with cold water.
  2. Chop vegetables and add to a large bowl.
  3. Combine dressing ingredients in a jar and shake well.
  4. Add pasta, vegetables, olives, feta, and parsley to the bowl. Pour dressing over salad and toss.
