Ingredients
  

Dough
  • 1 cup gluten free all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/4 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup powdered sugar for coating

Method
 

  1. Mix dry ingredients; set aside.
  2. Combine sugars and oil; add eggs and vanilla.
  3. Gradually mix in dry ingredients; chill dough 30 mins.
  4. Portion dough, roll into balls, coat with powdered sugar.
  5. Bake at 350°F (175°C) for 10-12 mins; cool before serving.

Notes

Chilling the dough makes handling easier and results in better cookies.
