- In a mixing bowl, combine the oats, cinnamon, almond butter, honey, and vanilla extract. Mix until you have a sticky dough. If the mixture is too dry, add a little more almond butter and honey to adjust.
- Line a muffin pan with muffin liners. Spoon the granola mixture into each liner, pressing down firmly with your fingers to form a solid base.
- Add a spoonful of Greek yogurt on top of the granola base in each cup.
- Finish by topping each cup with a generous amount of fresh berries and any leftover bits of granola.
- Place the muffin pan in the freezer and allow the granola cups to set for at least 4 hours, ensuring they are firm and fully set.
- Before serving, remove from the freezer and let them thaw for a few minutes to make them easier to eat.
Notes
Feel free to experiment with different types of nuts, seeds, and dried fruits in the granola base.
