Ingredients
  

Granola Base
  • 3/4 cup oats
  • 1/2 tsp cinnamon
  • 1/4 cup almond butter
  • 3 tbsp honey adjusted to taste
  • 1 tsp vanilla extract
Yogurt Topping
  • 1 1/2 cups Greek yogurt for a vegan option, use a plant-based yogurt
Berry Topping
  • Berries of choice such as strawberries, blueberries, and raspberries

Method
 

  1. In a mixing bowl, combine the oats, cinnamon, almond butter, honey, and vanilla extract. Mix until you have a sticky dough. If the mixture is too dry, add a little more almond butter and honey to adjust.
  2. Line a muffin pan with muffin liners. Spoon the granola mixture into each liner, pressing down firmly with your fingers to form a solid base.
  3. Add a spoonful of Greek yogurt on top of the granola base in each cup.
  4. Finish by topping each cup with a generous amount of fresh berries and any leftover bits of granola.
  5. Place the muffin pan in the freezer and allow the granola cups to set for at least 4 hours, ensuring they are firm and fully set.
  6. Before serving, remove from the freezer and let them thaw for a few minutes to make them easier to eat.

Feel free to experiment with different types of nuts, seeds, and dried fruits in the granola base.
