Method
- Cook pasta until tender, 6 to 10 minutes. Drain and rinse under cold water.
- Whisk vinegar, salt, pepper, oregano, pepperoncini juice (if using), and olive oil. Add pasta and mix well.
- Stir in bell pepper, zucchini, tomatoes, scallions, pepperoncini (if using), olives, parmesan, mozzarella, and herbs (if using). Adjust seasoning. Refrigerate for at least 30 minutes.
Notes
For a richer flavor, marinate the vegetables in the dressing for a few hours before adding the pasta.
