  • 1 cup cherry tomatoes, halved
  • 1/2 cup sliced black olives
  • 1/2 cup diced cucumber
  • 1/3 cup diced red bell pepper
  • 1/4 cup red onion, finely chopped
  • 1/2 cup grated Parmesan cheese
  • 3/4 cup Italian salad dressing
  • Salt and black pepper to taste
  • 2 tbsp chopped fresh parsley (optional)

Method
 

  1. Cook pasta until al dente. Drain and rinse under cold water.
  2. Combine pasta, tomatoes, olives, cucumber, bell pepper, and red onion in a bowl.
  3. Add Italian dressing and toss to coat.
  4. Stir in Parmesan cheese and season with salt and pepper.
  5. Garnish with parsley if desired. Chill for 10 minutes before serving.
