Ingredients
  

Pasta Salad
  • 1 pound pasta rotini, penne, or your favorite
  • 1 cucumber peeled, seeded, and diced
  • 1 red bell pepper diced
  • 1/2 red onion thinly sliced
  • 6 ounce black olives sliced
  • 4 ounce marinated artichoke hearts drained and quartered
  • 4 ounces feta cheese crumbled
Dressing
  • 1/4 cup olive oil
  • 3 tablespoons red grape juice vinegar
  • 1 tablespoon lemon juice
  • 1 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • to taste Salt and pepper

Method
 

  1. Cook pasta, drain, and rinse with cold water. Set aside to cool.
  2. Combine cooled pasta, cucumber, red bell pepper, red onion, black olives, and artichoke hearts in a large bowl.
  3. Whisk together olive oil, red grape juice vinegar, lemon juice, oregano, garlic powder, salt, and pepper in a small bowl.
  4. Pour the dressing over the pasta mixture and toss to combine.
  5. Gently fold in the feta cheese.
  6. Refrigerate for at least 30 minutes before serving.
  7. Serve chilled.

Notes

Add grilled chicken or chickpeas for extra protein.
