Ingredients
  

Bell Peppers
  • 4 large bell peppers (any color)
  • 1 pound ground beef or turkey
  • 1 cup cooked rice
  • 1 can (15 oz) diced tomatoes
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon italian seasoning
  • to taste salt and pepper salt and pepper
  • 1 cup shredded cheese (cheddar or mozzarella)
  • olive oil for cooking olive oil

Method
 

  1. Preheat oven to 375°F (190°C).
  2. Cut tops off peppers, remove seeds. Sauté onion and garlic in olive oil until soft.
  3. Add ground meat, cook until browned. Mix in rice, tomatoes, seasoning, salt, and pepper.
  4. Stuff peppers with mixture, place in baking dish, top with cheese.
  5. Cover with foil, bake 25 minutes. Remove foil, bake 10-15 more minutes until tender and cheese melts.

Notes

You can customize the filling with different cheeses or add vegetables for extra flavor.
