  • 1 pound pasta (rotini, penne, or farfalle)
  • 1 pound cooked chicken breast, diced
  • 1 cup Caesar salad dressing
  • 0.5 cup grated Parmesan cheese
  • 0.25 cup chopped red onion
  • 0.25 cup chopped fresh parsley
  • 0.5 cup croutons
  • to taste Salt and pepper

Method
 

  1. Cook pasta, drain, and rinse with cold water.
  2. Combine pasta, chicken, dressing, Parmesan, red onion, and parsley in a bowl.
  3. Season with salt and pepper.
  4. Stir gently to combine.
  5. Refrigerate for at least 30 minutes.
  6. Stir in croutons just before serving.
  7. Serve chilled.

Notes

For a lighter version, use light Caesar dressing and whole wheat pasta.
