Ingredients
  

Pasta Salad
  • 1 pound pasta such as rotini, penne, or farfalle
  • 1 pound cooked seafood mix shrimp, scallops, crab meat
  • 0.5 cup mayonnaise
  • 0.25 cup sour cream
  • 2 tablespoons lemon juice
  • 1 tablespoon Dijon mustard
  • 0.25 cup chopped celery
  • 0.25 cup chopped red onion
  • 2 tablespoons chopped fresh parsley
  • to taste Salt and pepper

Method
 

  1. Cook pasta, drain, and rinse with cold water. Set aside.
  2. Combine mayonnaise, sour cream, lemon juice, and Dijon mustard in a bowl. Mix well.
  3. Add celery, red onion, and parsley to the dressing. Stir.
  4. Gently fold in the cooked pasta and seafood mix.
  5. Season with salt and pepper to taste.
  6. Cover and refrigerate for at least 30 minutes before serving.

Notes

For a richer flavor, add a pinch of red pepper flakes to the dressing.
