Ingredients
  

Wet Ingredients
  • 1 cup coconut oil, melted
  • 1 cup brown sugar
  • 0.5 cup granulated sugar
  • 0.25 cup non-dairy milk such as almond or oat milk
  • 1 teaspoon vanilla extract
Dry Ingredients
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 0.5 teaspoon salt
Chocolate Chips
  • 1 cup dairy-free chocolate chips

Method
 

  1. Preheat oven to 350°F (175°C) and line a baking sheet.
  2. Mix melted coconut oil, brown sugar, and granulated sugar until combined.
  3. Add non-dairy milk and vanilla, stir until smooth.
  4. Whisk together flour, baking soda, and salt; add to wet mixture and combine.
  5. Fold in chocolate chips, scoop onto baking sheet, and bake for 10-12 minutes.

Notes

For softer cookies, bake for 10 minutes; for crunchier, bake closer to 12 minutes.
