Method
- Place chicken in crockpot, add beans, corn, chilies, onion, garlic, spices, and broth. Cover and cook on low for 6-8 hours.
- Remove chicken, shred with forks, then return to crockpot. Stir in cream cheese until melted.
- Stir in lime juice, garnish with cilantro, and serve hot.
Notes
For extra flavor, add diced avocado or shredded cheese as toppings.
