Ingredients
  

Protein
  • 1.5 lbs boneless, skinless chicken breasts
  • 2 cups chicken broth
  • 2 cans (15 oz each) white beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (4 oz) diced green chilies
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 0.5 tsp paprika
  • 0.5 tsp dried oregano
  • to taste Salt and black pepper
  • 4 oz reduced-fat cream cheese
  • 1 lime juice of lime
Garnish
  • as needed Fresh cilantro, chopped

Method
 

  1. Place chicken in crockpot, add beans, corn, chilies, onion, garlic, spices, and broth. Cover and cook on low for 6-8 hours.
  2. Remove chicken, shred with forks, then return to crockpot. Stir in cream cheese until melted.
  3. Stir in lime juice, garnish with cilantro, and serve hot.

Notes

For extra flavor, add diced avocado or shredded cheese as toppings.
