Method
- Boil pasta until al dente. Drain and rinse.
- Chop the cherry tomatoes, cucumber, bell peppers, and red onion.
- Combine pasta, veggies, and cheese in a bowl.
- Pour ranch dressing over and stir gently.
- Refrigerate for at least one hour.
- Serve chilled, garnish with parsley.
Notes
For a lighter version, use light ranch dressing and reduced-fat cheese.
