  • 8 oz rotini pasta
  • 1 cup ranch dressing
  • 1 cup halved cherry tomatoes
  • 1 cup diced cucumber (preferably English)
  • 1 cup diced bell peppers (any color)
  • 0.5 cup finely diced red onion
  • 1 cup shredded cheddar cheese
  • 2 tbsp chopped fresh parsley (for garnish)

Method
 

  1. Boil pasta until al dente. Drain and rinse.
  2. Chop the cherry tomatoes, cucumber, bell peppers, and red onion.
  3. Combine pasta, veggies, and cheese in a bowl.
  4. Pour ranch dressing over and stir gently.
  5. Refrigerate for at least one hour.
  6. Serve chilled, garnish with parsley.

Notes

For a lighter version, use light ranch dressing and reduced-fat cheese.
