Ingredients
  

Protein
  • 4 pieces boneless, skinless chicken breasts
  • Salt and pepper, to taste Salt and pepper for seasoning
Cooking Fat
  • 2 tablespoons olive oil
Mushrooms
  • 8 ounces mushrooms, sliced
  • 3 cloves garlic, minced
Broth & Cream
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1 teaspoon teaspoon dried thyme
  • 1 teaspoon teaspoon dried rosemary
  • 1 tablespoon tablespoon Dijon mustard
Side Dish
  • 2 cups mashed potatoes
  • Fresh parsley, chopped Fresh parsley for garnish

Method
 

  1. Season chicken with salt and pepper.
  2. Cook chicken in olive oil until browned, then set aside.
  3. Sauté mushrooms and garlic in the same skillet.
  4. Add broth, cream, herbs, and mustard; return chicken and simmer until cooked and sauce thickens.
  5. Serve over mashed potatoes, garnished with parsley.

For extra flavor, use fresh herbs when available.
