  • 4 pieces bone-in, skin-on chicken thighs
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
Vegetables
  • 2 cups carrots, sliced
  • 2 cups potatoes, diced
  • 1 piece onion, chopped
  • 3 cloves garlic, minced
  • 1 cup chicken broth
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon honey

Method
 

  1. Preheat oven to 400°F (200°C).
  2. Season chicken with salt, pepper, thyme, and paprika; sear in oil until golden.
  3. Sauté onions and garlic, add carrots and potatoes.
  4. Add broth, vinegar, and honey; return chicken, then bake 30-35 mins.
