Ingredients

  • 1 cup canned pumpkin puree
  • 1/2 cup vegetable oil
  • 1 cup sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
dry ingredients
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1/2 cup chopped walnuts or pecans (optional)

Method
 

  1. Preheat oven to 350°F (175°C) and grease a loaf pan.
  2. Mix pumpkin, oil, sugar, eggs, and vanilla until combined.
  3. Whisk together flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  4. Gradually add dry to wet, fold in nuts if using, then pour into pan.
  5. Bake 60-70 minutes, cool in pan 10 minutes, then transfer to wire rack.

Notes

For extra flavor, sprinkle with cinnamon before baking.
