Ingredients
  

Pasta Salad
  • 12 oz rotini or penne pasta
  • 2 cups cooked chicken breast, shredded or cubed
  • 1/3 cup buffalo wing sauce
  • 1 cup celery, finely diced
  • 1 cup red bell pepper, diced
  • 1/2 cup red onion, finely chopped
  • 1 cup cherry tomatoes, halved
Dressing
  • 3/4 cup ranch dressing
  • 1/4 cup sour cream
  • 1 tablespoon lemon juice
Garnish
  • 1/2 cup crumbled blue cheese
  • 2 tablespoons chopped fresh chives or parsley

Method
 

  1. Cook pasta until al dente. Drain, rinse, and cool.
  2. Toss chicken with buffalo wing sauce.
  3. Combine pasta, buffalo chicken, celery, bell pepper, red onion, and tomatoes.
  4. Whisk together ranch dressing, sour cream, and lemon juice.
  5. Pour dressing over pasta mixture and toss.
  6. Refrigerate for at least 30 minutes.
  7. Garnish with blue cheese and chives or parsley before serving.
